Even though all this snow has made the Great Smoky Mountains look like a Winter Wonderland, many of you are probably running out of things to do with your little ones who have been out of school for a couple weeks now!

Have you been eating your way through these snow storms?  Or are you running out of ideas on what to feed your bunch?  

Here are a few recipes for each meal to get everyone active:

Omelet:
  • Favorite Family Recipes has a great recipe for a veggie omelet:
  • Ingredients:
    • For the filling:
      • ½ Tbsp. butter
      • 2 Tbsp. chopped onion
      • ¼ c. chopped mushrooms
      • ½ c. fresh spinach
      • 3-4 cherry tomatoes, sliced in half
      • shredded cheddar cheese, to taste
    • For the omelets:
      • 2 eggs
      • 2 Tbsp. vegetable or canola oil
      • 2 Tbsp. water (or milk)
      • salt and pepper, to taste

Homemade Cinnamon Rolls:
  • Life Made Simple has a quick and easy recipe that takes only one hour!
  • Ingredients:
    • 2¾ c. all-purpose flour
    • ¼ c. sugar
    • 2 tbsp. butter
    • 1 egg
    • 1 package instant (quick rise) yeast (or 2¼ tsp.)
    • ½ c. water
    • ¼ c. whole milk
    • 1 tsp. salt
  • Filling:
    • ⅔ c. brown sugar
    • ¼ c. (½ stick) butter, room temperature
    • 1 tbsp. ground cinnamon
    • ¾ tsp. vanilla extract
    • ¼ tsp. almond extract
  • Vanilla glaze:
    • 1½ c. powdered sugar
    • ¼ c. (½ stick) butter, melted
    • 1 tsp. vanilla extract
    • 2-3 tbsp. milk

Pancakes:
  • King Arthur Flour has a great recipe for easy, made from scratch pancakes!

Homemade Chili:
  • Pip and Ebby have a fantastic chili recipe!
  • Ingredients:
    • 2 pounds ground beef, turkey or venison
    • 4 tablespoons extra-virgin olive oil
    • 1 yellow or white onion, chopped
    • 1 green bell pepper, chopped
    • 4 cloves garlic, minced
    • 1/4 cup flat-leaf parsley, finely chopped
    • 2 jalapeño peppers, finely chopped (optional)
    • 3 tablespoons chili powder
    • 2 teaspoons cumin
    • 1 teaspoon sugar
    • 1 teaspoon oregano
    • 1 teaspoon salt
    • 1 teaspoon black ground pepper
    • 1/4 teaspoon cayenne pepper
    • 46-oz. can tomato juice
    • 28-oz. can diced tomatoes
    • 15-oz. can tomato sauce
    • 16-oz. can kidney beans, drained and rinsed
    • 16-oz. can pinto beans, drained and rinsed
    • Shredded cheese and sour cream, for topping
  • Instructions:
    • In a large skillet, cook ground meat over medium-high heat until no longer pink. Transfer the meat to a bowl. Drain excess grease from skillet, but do not clean.
    • Add the olive oil to the skillet and heat over medium-high heat. Add the onion, green pepper, garlic, parsley and jalapeño peppers (if using). Cook, stirring occasionally, until onions are soft and fragrant, about 5 minutes. Remove from heat and add the chili powder, cumin, sugar, oregano, salt, pepper and cayenne pepper. Stir until combined.
    • If cooking the chili stovetop, add the cooked meat back to the skillet. If you are using a slow cooker, add everything to the slow cooker. Add the tomato juice, diced tomatoes, tomato sauce, kidney beans and pinto beans. On stovetop, bring to a boil, dial back to medium-low and simmer for 2 hours. In slow cooker, cook on low for 7 to 8 hours. Serve warm with cheese and sour cream.
Fried Mac N' Cheese Bites:
  • Food Network has a great recipe for mac n' cheese bites!
  • Ingredients:
    • 1 pound elbow macaroni
    • 2 TB unsalted butter
    • 2 TB all-purpose flour
    • 2 cups milk, warmed, plus 2 TB for egg wash
    • 1 pound grated cheddar
    • 1 pound grated smoked gouda
    • Salt and freshly ground black pepper
    • 2 large eggs
    • 3 cups seasoned bread crumbs
    • Vegetable oil, for frying
    • Marinara or alfredo sauce, to serve
  • Instructions:
    • Cook the macaroni according to package instructions. Drain and rinse with cold water to stop the cooking. Drain again and set aside.
    • In a saucepan, melt the butter over medium heat. Sprinkle the flour into the butter and stir it with a whisk. Cook for 2 minutes. Whisk the warmed milk into the flour mixture, working out any lumps. Cook until the sauce thickens, about 2 minutes. Remove from the heat, add the cheeses, and stir until melted and smooth; season with salt and pepper. Fold the cheese sauce into macaroni. Pour the mac and cheese into a shallow pan and refrigerate until cold, at least 2 hours.
    • Shape the cold mac and cheese into meatball-sized balls and place them onto a waxed paper-lined tray. Freeze the balls overnight.
    • Beat the eggs and 2 tablespoons milk together to form an egg wash and pour it into a shallow bowl. Put the bread crumbs into another shallow bowl. Remove the mac and cheese balls from the freezer. Dip the frozen balls into the egg wash then into the bread crumbs. Put the balls back into the freezer until you are ready to fry.
    • Heat the oil in a deep-fat fryer to 350 degrees F. Fry the mac and cheese balls until they are golden brown and center is hot, about 5 minutes. Serve hot with your favorite marinara or Alfredo sauce or combination or both for dipping.

Seven Layer Taco Dip:
  • Allrecipes.com has an awesome recipe for seven layer taco dip.
  • Ingredients:
    • 1 ounce package taco seasoning mix
    • 1 can refried beans
    • 1 package cream cheese, softened
    • 1 container sour cream
    • 1 jar salsa
    • 1 large tomato, chopped
    • 1 green bell pepper, chopped
    • 1 bunch chopped green onions
    • 1 small head iceberg lettuce, shredded
    • 1 can sliced black olives, drained
    • 2 cups shredded Cheddar cheese
  • Instructions:
    • In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
    • Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
    • Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

Homemade Hot Chocolate:
  • BeautyandBedlam.com have a great 5 minute homemade hot chocolate recipe!
  • Ingredients:
    • 2 cups instant non-fat dry milk powder
    • 1 cup sugar (powdered or granular works too)
    • 3/4 cup powdered nondairy creamer
    • 1/2 cup unsweetened cocoa powder
    • 1 cup semi sweet chocolate chips
    • 1/8 teaspoon salt
    • mini marshmallows
  • Instructions:
    • In a large bowl, combine the creamer, milk powder, sugar, salt, and cocoa powder.
    • Mix to combine.
    • Pour into air tight container or freezer bag for storage.
    • Add 1/3 cup of cocoa mix to 1 cup boiling water. (Or use 1/2 hot milk for a more decadent cocoa.)
    • Mix well.
    • Add chocolate chips and stir until melted. Depending on how “chocolatey” you want it, the amount will vary. Taste test will tell.
    • Sprinkle top with mini marshmallows and whip cream.

Snow Cream:
  • Becentsable has a quick and easy recipe for snow cream.
  • Ingredients:
    • 4 cups snow
    • 1 cup milk
    • ¼ cup sugar
    • 1 tsp. Vanilla
  • Mix and enjoy!
Fudge:
  • Allrecipes.com has a wonderful homemade fudge recipe!
  • Ingredients:
    • 1 jar marshmallow crème
    • 1 ½ cups white sugar
    • 2/3 cup evaporated milk
    • ¼ cup butter
    • ¼ teaspoon salt
    • 2 cups milk chocolate chips
    • 1 cup semisweet chocolate chips
    • ½ cup chopped nuts
    • 1 tsp. Vanilla extract
  • Instructions:
    • Line an 8x8 inch pan with aluminum foil. Set aside.
    • In a large saucepan over medium heat, combine marshmallow cream, sugar, evaporated milk, butter and salt. Bring to a full boil, and cook for 5 minutes, stirring constantly.
    • Remove from heat and pour in semisweet chocolate chips and milk chocolate chips. Stir until chocolate is melted and mixture is smooth. Stir in nuts and vanilla. Pour into prepared pan. Chill in refrigerator for 2 hours, or until firm.
